This course focuses on the role of communication in the production, regulation, advertising, distribution, consumption, and disposal of food and textile products. The course will draw from scientific, governmental, marketing, popular, and academic sources to examine issues such as the role of scientifically-based information in relation to the regulation of organically-grown food, genetically modified organisms, food and nutrition labeling, product care and manufacture labeling laws, labor laws, recycling, and false advertising and defamation claims.
The course includes a research component in which students will develop a web-based project based drawing upon course discussion, field trips and guest lecturers.
Enrollment priority for students who have completed (or by concurrent enrollment during Winter, will have completed) at least 3 GE courses in the Food & Fiber Theme Option and are registered with the GE Scholars program.
